Grilled Solano County Quail with Black Japonica Rice, arugula salad, grilled pineapple salsa

INGREDIENTS FOR THE RICE:

In a rice cooker – place
2 – 1/3 cups of Black Japonica Rice
1 quart cold stock (adds much more flavor) or water
2 Tbl minced shallots
3 Tbl tomato concasse
2 Tbl chopped Italian parsley
1 Tbl sea salt
½ tsp ground white pepper

DIRECTIONS FOR RICE:

  1. mix all ingredients and turn cooker on.
  2. Run through cycle and let rest in cooker until ready for service.
  3. At service heat a sauté pan with 2 Tbl butter, 2 Tbl chopped fresh oregano, 3 more TBL tomato concasse, place cooked rice in pan, stir and toss until hot and evenly distributed.

FOR THE QUAIL:

1-2 each per person (depending on group) semi boneless from your butcher.
½ cup pineapple juice
½ cup low-sodium soy
Combine liquid ingredients – set aside, a couple of minutes before grilling add quail to liquid.
Heat a grill to a medium high, grill quail for 2-3 minutes per side depending on desired doneness, remove and let rest in a warm area of grill or pan.

FOR THE ARUGULA SALAD:½ cup cleaned arugula per person
Extra virgin olive oil to drizzle
2 meyer lemons
Sea salt to taste
Toss all ingredients together check seasonings and adjust if neededFOR THE PINEAPPLE SALSA-COMBINE ALL INGREDIENTS:1 cup grilled pineapple – small diced
2 Tbl grilled red onions – small diced
2 Tbl finely chopped cilantro
2 Tbl roasted red bell peppers small diced
½ Tbl sea salt
1 each grilled jalapeno – small dice – * be careful please check for heat level before adding, add to taste, if spicy add less, if more mild add more, remove seeds or add accordingly.
