Freaky Forbidden Edamame Rice

For those who love their Freaky Edamame, this is a perfect side dish combining the flavors of spicy edamame with the nourishing staple that is reputed to promote long life and good health, forbidden black rice. This dish is over the top with the creamy garlic and chili sauce blend!

Ingredients

Rice Preparation:
1 cup California Heirloom Black Rice
2 teaspoons sesame oil
1 sweet onion, diced
3 cloves garlic, minced
1 teaspoon soy sauce
2 cups chicken broth

Edamame Preparation:
1 bag frozen, shelled Edamame, thawed
2 teaspoons sesame oil
6 cloves garlic, minced
1 Tablespoon chili paste
2 teaspoons Sriracha Hot Chili Sauce
1 Tablespoon sweet & sour sauce
1 teaspoon soy sauce
1 teaspoon seasoned rice vinegar
2 Tablespoons mayonnaise

Directions

Rice Preparation:
Rinse rice in cold water.
Heat sesame oil over low heat. Add onion and garlic and cook for several minutes until a golden brown, stirring frequently. Stir in California rice and soy sauce and cook for 1 minute. Add chicken broth, stir and bring to a boil. Reduce heat to a simmer and cover. Cook for 40 minutes, or until rice is tender. Set aside.

Edamame Preparation:
Steam thawed edamame in microwave for 2 minutes. Set aside.
Heat sesame oil over low heat. Add garlic and cook for several minutes until a golden brown, stirring frequently. In a small bowl combine the cooked garlic, chili paste, chili sauce, sweet & sour sauce, soy sauce, rice vinegar and mayonnaise. Add steamed edamame to the chili sauce mixture and toss to evenly coat edamame.

Stir edamame mixture into the cooked rice. Season with sea salt flakes, if desired. Place rice mixture in serving dish and serve warm.

Serves 6-8
