Feed Your Chocolate Craving
By Julie Cader
I suppose it’s never wise to go shopping early in the morning on an empty stomach. Maybe that’s why I just had to have some Cocoa Krispies topped with a sliced banana! Sounds pretty good, right? Well, you think I would have purchased the small box, but NO, I went for the 32% more for free! There goes my New Years resolution. Fun fact, though, each piece of Kellogg’s Cocoa Krispies® cereal is made from a single grain of toasted rice and real cocoa. Feeling healthier already, especially now that I am sharing the recipe for cookies made with Cocoa Krispies (I had to use the 32% more for free somewhere!) adapted from Cooks.com.
Cocoa Krispie Cookies
1 ¼ cup of flour
1 tablespoon of unsweetened cocoa powder
½ teaspoon of baking soda
¼ teaspoon of salt
1 cup of sugar
½ cup of butter
1 large egg
1 Tablespoon of Crème De Cocoa
1 1/2 teaspoons of quality vanilla extract
2 cups of Cocoa Krispies cereal
½ cup of chopped walnuts
Let’s get started. Sift flour, cocoa powder, baking soda and salt. In separate bowl, cream the sugar, butter, and egg, then add the Crème De Cocoa and vanilla. Fold into flour mixture. Next fold in Cocoa Krispies cereal and walnuts. Take a sip of the Crème De Cocoa, while you’re at it.
Drop by generous tablespoon onto lined or greased cookie sheets and bake 350 degrees for 13 minutes. Makes about two-dozen large cookies. Now go feed that craving!
